Healthy Mashed Sweet Potatoes
Carbohydrates anyone? These are the good ones. Perfect for energy. If you're active, you need clean carbohydrates to fuel your workouts.
- 4 c butternut squash cubed
- 2 large sweet potatoes peeled and cubed
- 1/4 c olive oil extra virgin
- 1 tsp. sea salt
- 2 tsp. pumpkin pie spice
- 1/2 c fresh cilantro chopped
- 1/4 c Waxing Kara Honey
Combine and toss squash and sweet potatoes with olive oil then roast for 45 minutes covered with foil.
Remove foil and roast for an additional 30 minutes more.
Once soft, place the mixture in a food processor with the remaining ingredients.
Process until all is combined and look like mashed potatoes.
