Chocolate Dipped Strawberries

- 1/2 c chocolate chips bittersweet
- 1/2 tsp coconut oil refined
- 12 large strawberries stems attached
Wash and dry the strawberries, and get them to room temperature.
Line a baking sheet with parchment or wax paper.
Put chocolate chips and coconut oil in a small glass bowl.
Melt in the top of a double boiler over hot, but not boiling, water, stirring occasionally.
Dip half of each strawberry into the melted chocolate. Let the excess drip back into the double boiler.
Place the dipped fruit on lined baking sheet.
Refrigerate until the chocolate is set, about 30 minutes.
