Easy Pickled Beets Recipe

These beets will brighten the most boring salad or vegetable dish and are easy to make, as in it takes minutes to make them. They can be prepared and kept in the refrigerator for a week in an air-tight container.

  • 2 lb beets in a variety of colors
  • 1 large sweet onion
  • 3/4 c olive oil
  • 1/2 c white balsamic vinegar
  • 1/2 c lemon fresh-squeezed
  • 1/2 c Waxing Kara Honey
  • 2 cloves garlic
  • 2 tsp. salt
  • 1 tsp. red pepper flakes


  • Peel beets and slice into small chunks or small slices to your preference
  • Slice onion into thin slices and combine with beets
  • Place beets and onions into airtight glass jar
  • Crush garlic cloves and place on top
  • In a medium glass bowl mix the remaining ingredients
  • Mix well
  • Pour over the beet and onion mixture
  • Close lid and refrigerate overnight
