Our friend Marly of Namely Marly is quite the chef she is the founder of Chopped Academy and has written oodles of recipes for the world to enjoy. She’s written one or two vegan pumpkin recipes as well-actually, more than just two! Marly has generously offered to share these recipes with us for you all to enjoy, just in case you missed them on her own blog. Perfect timing for the start of fall, isn’t it?
Marly follows a vegan diet, and she uses honey in a good handful of the recipes she cooks up. Veganism and honey have a strange relationship; there’s plenty of vegans who swear against honey because it comes from insects, but there are still plenty more who eat it when it comes from responsible apiaries.
Honey is made from plant nectar but has to be processed by a bee, so it’s a gray area for a lot of people. I personally know a handful of people who have vegan diets but still include honey, as long as it’s from a responsible provider. Bees aren’t harmed when honey is properly and responsibly harvested, and they will produce honey no matter what (it’s not like dairy cows who are given hormones to produce milk).
The same thing goes for eggs. I went to school with a girl who had an otherwise vegan diet but would eat eggs when she’d buy them from a local family in her neighborhood. The chickens were well cared for, actually free-range, and, like the bees, would lay eggs no matter if their people wanted them or not. If you prefer to not use honey, try maple or agave syrup instead.
