Vegan Pumpkin Recipes for Autumn

Our friend Marly of Namely Marly is quite the chef she is the founder of Chopped Academy and has written oodles of recipes for the world to enjoy. She’s written a one or two vegan pumpkin recipes as well-actually, more than just two! Marly has generously offered to share these recipes with us for you all to enjoy, just in case you missed them on her own blog. Perfect timing for the start of fall, isn’t it?

Marly follows a vegan diet, and she uses honey in a good handful of the recipes she cooks up. Veganism and honey have a strange relationship; there’s plenty of vegans who swear against honey because it comes from insects, but there are still plenty more who eat it when it comes from responsible apiaries.

Honey is made from plant nectar but has to be processed by a bee, so it’s a gray area for a lot of people. I personally know a handful of people who have vegan diets but still include honey, as long as it’s from a responsible provider. Bees aren’t harmed when honey is properly and responsibly harvested, and they will produce honey no matter what (it’s not like dairy cows who are given hormones to produce milk).

The same thing goes for eggs. I went to school with a girl who had an otherwise vegan diet but would eat eggs when she’d buy them from a local family in her neighborhood. The chickens were well cared for, actually free-range, and, like the bees, would lay eggs no matter if their people wanted them or not. On her blog, Marly spoke about the topic of vegans who eat honey in depth. If you prefer to not use honey, try maple or agave syrup instead.

Anyway, I digress. We’re coming into pumpkin season officially, and Marly’s recipes definitely take the cake for creativity and yumminess! Here are some of our favorites from her blog.

Enjoy Vegan Pumpkin Recipes This Season

Marly’s Vegan Pumpkin Magic Bars are a chocoholic (and pumpkinholic’s) dream come true. They’re sweet, dense, and not too bad for you, but they definitely are a treat. These would be perfect for an after school snack or a little treat at breakfast time!

Next up on Marly’s pumpkin list is her Vegan Pumpkin Crisp. It’s sweet and spiced, and just perfect for accompanying your cup of coffee. You would never guess the secret ingredient…chickpeas!

These Pumpkin Spiced Chocolate Chip Cookies are a perfect little snack. Make sure you set a timer so they come out with a crispy outside and ooey-gooey center.

Who doesn’t love a good donut? Marly’s Vegan Pumpkin Cinnamon Sugar Donuts will give your local bakery a run for its money. You wouldn’t believe how fluffy and soft they are!

Perfect for weekends away and roadtrips, Marly’s Pumpkin Spice Snack Mix is an awesome fall treat. Easy to whip together, it has lots of wiggle room for you to toss in your favorite goodies. Maybe a few M&Ms would be a sweet add in…

Last, but certainly not least, is this indulgent Vegan Pumpkin Cheesecake. Made from a vegan cream cheese and pumpkin puree, it’s a perfect dessert, no matter the day of the week.
