Clover Honey is a Classic Favorite

Every day in our Honey House, people come in out of curiosity. When they arrive they make it clear that they are interested in “normal” honey. We offer a tasting and start with Clover which makes wonderful every-day “normal” honey.

Clover Honey is varietal honey familiar to most people by name, that makes a wonderful table honey. Varietal Honey (made with nectar from one type of crop) are true labors of love by the beekeeper who carefully sets hives in the center of cultivated fields for bees to provide pollination for just the brief time of blossoming. Since bees will fly 2-6 miles to find nectar, the challenge in achieving varietal honey is to provide enough crops of one type to satisfy the hive to prevent them from further foraging. When the crop finishes blossoming, the beekeeper collects the hives, allows the honey to cure and processes the honey. Varietal honey tastes different from region to region, the fun is in collecting honey from everywhere and comparing the flavors.

Clover Honey Tasting Notes

Grassy and floral with notes of butterscotch, vanilla, and caramel. The mild sweet finish is easy to use in just about everything you can imagine from marinades to salad dressings and sweeteners for tea and baking and especially good in hot tea.

Taste: Sweet and creamy light caramel, butterscotch, and toffee with a slightly salty finish.

Pairing Notes

Clover Honey pairs well a salty hard cheese or any creamy cheese on crostini or your favorite flatbread, and a glass of Gewürztraminer; its mild smooth caramel flavor will enhance any food. Toss a salad with fruit, walnuts and clover honey vinaigrette. Drizzle clover honey over fresh strawberries and blueberries or pistachio ice cream.

Every Honey Tells a Story

I started beekeeping six years ago and covered all of the details in my blog and my YouTube channel. My mentor, Dale Large, a fifty-plus-year beekeeping veteran has taken the lead with my apiary and I am his devoted protégé. I am blessed and humbled by the amazing honey that the bees are making – from our farming efforts, and continue to expand to increase the amount of honey that I can offer from my own apiary on Chesterhaven Beach Farm.

About Small Batch Artisanal and Varietal Honey

Like wine reflects the complexity of the soil and weather, honey tells the story of the hive surroundings in the same way. Our Waxing Kara® honey is nature’s blend from Chesterhaven Beach Farm. Each year, we add more plants and trees to support the bees. This is a years-long process, and each year the honey will be different.

Varietal Honeys (made with nectar from one type of crop) are true labors of love by the beekeeper, who carefully sets hives in the center of cultivated fields for bees to provide pollination services just for the brief time of blossoming. Since bees will fly up to six miles to find nectar, the challenge in achieving varietal honey is to provide enough crops of one type to satisfy the hive.

We don’t do any fancy blending, colorizing or infusing, nor do we pasteurize or boil honey. Pasteurization destroys all of the pollen, enzymes, propolis, vitamins, amino acids, antioxidants and minerals in honey. We sell only raw honey that’s been minimally filtered. We grow our own and buy from other small growers to keep pace with growing demand for honey in our region. We bottle, label and package by hand at our Honey House in Owings Mills, Maryland.

Care of Honey

Honey is a “perfect” food with an indefinite shelf life. Store in airtight glass, away from direct sunlight. Do not refrigerate. It’s not unusual for some honey to crystalize over time. It’s not a bad thing, it proves the honey is raw. If cloudy or crystallized honey doesn’t appeal to you, reconstitute by placing the glass jar in a pan of water that has been brought to a boil and removed from heat.

Anyway, just wanted to let you know the packaging is awesome and I want to explore your site for a while. Love the simplicity of the design.

    Thank you. I never thought when I got a jar of “Eastern Shore, Clover Honey from you for my mom how it would touch my life……My my mom will be 82 wonderfully wise years old this 22 of May, 2013. I gave her your clover honey and asked her the next day how she liked it. (I try to visit my mom everyday, even if just for a few minutes to to check on her and spend a few minutes of my morning or evening with her because I really want to not because I have to.) Back to the honey, when I asked her how she liked it, is when I got a glimpse into her childhood. She told me that the honey took her back to when she was a young girl and the farm and her daddy kept bees.First. I had no idea that my grandfather kept bees, at the homeplace in Damascus, Va. close to the borders of Tennesse and Kentucky. She had the smile of the little girl on the farm and I had the smile of the grandaughter learning something new at 53 about my mom. Life is amazing and thank you for giving my mom that reminder of being a child. . . . enjoying a taste of her childhood in your “Eastern Shore, Clover Honey.

    Because we all grew up with generic “Clover” honey at the grocery store, we assume that we know what it tastes like–which is why this variety of WaxingKara honey is the most surprising. There are deep flavors in this jar and a farm-to-table freshness that compels you to not only enjoy it (and secretly hide it in the back of the cabinet) but to tell your friends about it. These are the flavors that mass market brands steal away and only a careful gardener can capture. The difference is remarkable.

Every effort will be made to fulfill your order as quickly as possible. Pending stock availability, please allow 3 business days to process your order. More if holidays are involved.

If a package does not arrive within 7 days, something is up. Usually dialogue has to happen between you and your postman. If you are shipping to a multi-unit dwelling place make sure you ask where packages that are too large to fit in your box are placed. Sometimes that place moves. Ask questions.

Most orders are shipped by USPS with delivery confirmation. We ship to the address that you furnish and if the item is returned to us we will make every effort to contact you for a new mailing address. If we are unable to resolve items returned to us we will refund all but shipping costs and restocking fees of 15% to your account.

Note: If we are shipping to the West Coast we sometimes use FedEx Ground depending on the weight and size of package. If we use FedEx all policies apply to FedEx.

IMPORTANT NOTE: We ship to the address that you provide. If you need us to ship to a different address let us know immediately after you place your order through our contact form. Please don’t ask us to reship products at our expense if you have provided the wrong mailing address with your order. Once the package is returned to us, we will ship to the correct address at your expense.
