Peach Cobbler Day is More Fun with this dish

For this peach cobbler, we opted out of adding on the thick crumble topping and instead made a glaze to cover the peaches. This allows the fruit to shine through and cuts out some calories without sacrificing any of the yumminess. Technically, this could be called a galette, which is a crusty pie hailing from France. Just add the topping back and you’ll have your cobbler in its traditional form again.

Peach Cobbler made with Honey

Who doesn’t love dessert? We definitely do! And at the Honey House, we have a favorite: cobbler. Made with loads of fresh fruit, honey, and a thick, crumbly topping, cobbler is everything you could want in a dessert. Cobblers can be made with berries, cherries, apples, or peaches-we’ll gladly sample them all!

Make a cobbler in celebration of a birthday, anniversary, or just because you want something sweet

We won’t judge! We used our Eastern Shore Honey in this cobbler to compliment the sweetness of the peaches without competing too much with the flavors. Honey also has a lower glycemic index than processed sugar and has trace amounts of vitamins, minerals, and enzymes that cane sugar lacks. Not to mention that it’s tasty!

Peach cobbler is one of the most popular desserts and for good reason. It’s sweet, fruity, crunchy and creamy, and absolutely elegant. In fact, it’s so popular that April 13th has been named National Peach Cobbler Day!

Peach Filling

  • 8 soft peaches peeled and sliced
  • 1/2 c Waxing Kara Honey
  • 3 tbsp. flour
  • 1 tsp. vanilla extract

For the Crust

  • 1 tbsp. coarse raw sugar or honey crystals
  • 1 egg

For the Dough

  • Combine the flour and salt together in a food processor and blend well.
  • Next, add in the chopped butter and pulse until crumbly.
  • Add in the honey, coconut milk and cream, and one egg and blend until just mixed.
  • Remove from the food processor, gently knead, and work into a circle shape. Don’t overdo the dough so it stays delicate. Wrap and refrigerate the dough for at least an hour.

For the Filling

  • Combine the sliced peaches with the honey, vanilla, and flour and toss well to coat.

Baking the Galette

  • Preheat the oven to 400 degrees.
  • On a flat baking sheet, gently stretch out the dough into a thin circle shape. Place the peach filling in the center of this in a circle formation.
  • Gently fold and twist the dough into a pleated pattern around the peaches, so that it wraps and covers around the edges to make a crust.
  • Whisk the second egg and use this to lightly brush the crust. Sprinkle with the raw sugar or honey crystals and bake for about 35-40 minutes, until the crust is golden and the center is bubbling.
  • Cool and serve with vanilla ice cream, fresh berries, or whipped cream
