Peanut Butter Granola Bars

These Peanut Butter Granola Bars are not made in an oven. Granola recipes have been around forever, but serving up raw granola in bar form makes it altogether different. This recipe only gets better when a little chocolate is drizzled over the top! We love encouraging you to make and enjoy healthy snacks rather than snacks sweetened with processed sugars. We added superfoods to these Granola Bars, like pumpkin seeds, cacao nibs, and dried mulberries. Of course, if you don’t have dried mulberries handy, use yellow raisins (or any dried fruit) instead. These are completely indulgent but healthy too. They’re loaded with omega-3s, protein, fiber, and much more!

How to Make Peanut Butter Granola Bars

Place a piece of parchment paper at the bottom of a square baking pan, preferably 8X8.

Gather all of the ingredients

Add the oats, puffed rice, chopped walnuts, chia seeds, pumpkin seeds, ground flax seeds, cacao nibs, and dried mulberries in a mixing bowl. Stir to combine.

In a microwave-safe bowl, add the peanut butter and honey. Microwave for 20 - 30 seconds. Stir to combine. Add the vanilla and stir.

Pour the peanut butter mixture over the oat mix. Stir until everything is coated and well combined. Use a large spoon to scoop the granola mixture into your prepared pan. Use the bottom of that spoon to press the granola down. You should have a firm layer of granola in your pan.

Pour the dark chocolate chips and coconut oil into a microwave-safe bowl. Microwave for 30 seconds, then let the mixture sit for about a minute. The chocolate should be melted if it's not microwaved for another 20 seconds or so. Stir to combine.

Drizzle the granola with the melted chocolate, allowing the chocolate to spill down the sides. Place a cover on the pan or wrap it with plastic wrap. Refrigerate for at least an hour before cutting into 8 bars.

Store in a sealed container in the refrigerator.
