Serves 8

Honey Infused Strawberry Scones

Ingredients

  • 2 1/2 c all-purpose flour
  • 1 c powdered sugar
  • Honey Drizzle
  • 1 tsp. butter, melted
  • 1 tbsp. plant-based milk
  • Scone Wash
  • 2 - 3 tablespoons strawberry vodka
  • 10 strawberries, washed
  • 3 tbsp. Waxing Kara Spring honey
  • 2 tbsp. plant-based milk
  • 3 tbsp. water
  • 1 tbsp. cornstarch
  • 1 tbsp. ground flax meal
  • 1/2 c butter or coconut oil (cold)
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tbsp. honey

Instructions

  1. Heat your oven to 400F. Line a baking sheet with parchment paper.
  2. In a food processor bowl combine the flour, salt, and baking powder. Pulse a couple of seconds to combine. Next chop the cold butter (or coconut oil) into pieces and add to the flour mixture. Pulse for several more seconds until the fat is incorporated throughout the flour. Set aside.
  3. In a mixing bowl combine the ground flax meal, cornstarch, water, milk, and honey. Stir to combine. Set aside.
  4. Remove the stems from the strawberries, and cut each strawberry in half and then cut those halves in half, quartering the strawberries. Add the chopped strawberry pieces to the flour mix in your food processor. Pulse 2 - 3 times for a second or two each. Just quick pulses to help coat the strawberries and break them into smaller pieces.
  5. Pour the strawberry flour mixture over the honey mixture. Gently stir to combine. It will be a crumbly mix. Add the strawberry vodka, one tablespoon at a time. The vodka will help make the mixture more manageable, and will evaporate in the baking process, creating a flakier scone.
  6. Pour this onto a lightly floured surface. Gently form into a circle, around 7 - 8 inches in diameter. If pieces flake off, just add just a little bit of vodka to help patch it together. Cut the circle in half, Then turn and cut the halves in half, creating four equal triangles. Cut each of those in half to create 8 triangle pieces.
  7. Gently transfer the 8 pieces to your prepared baking sheet.
  8. Place 1 tablespoon plant-based milk and 1 teaspoon melted butter in a small bowl. Stir to combine. Brush the top of each scone with this mixture to create a nice, golden crust.
  9. Bake for 18-20 minutes, until the top is golden brown. Remove from the oven and allow to cool for several minutes.
  10. In the meantime make your honey glaze by combining powdered sugar with honey. Stir together and add just a splash of milk to achieve a spreadable consistency.
  11. Allow the scones to cool before drizzling.
