Our Carrot Ginger soup is so delicious it’s hard to believe how simple it is to make. I find the most nourishing foods also are the foods that require only a few ingredients and come together in less than an hour, including prep time.

How to make Easy Carrot Ginger Soup
You mix carrots, onions, garlic, jalapeño, ginger, some stock, cumin, salt, honey, coconut milk, and lime juice in this carrot ginger soup.
- In a medium pot, sauté onion in coconut oil until transparent.
- Add garlic, jalapeno, and ginger and sauté one minute.
- Add carrots and continue to sauté for another minute.
- Add chicken broth and simmer for 12 – 15 minutes until carrots are tender.
- Allow soup to cool.
- Place soup, honey, coconut milk, cumin, salt, and lime juice in a high-speed blender and blend until smooth.
- Serve warm and garnish with lime zest and chopped herbs; drizzle with olive oil if desired.

Easy Carrot Ginger Soup
Ingredients
- 1 medium onion Vidalia, peeled and chopped
- 1 tbsp. coconut oil
- 2 cloves fresh garlic peeled and minced
- 1 tsp. jalapeno or red Chile pepper minced
- 1 1/2 tbsp. ginger fresh grated
- 6 medium carrots peeled and chopped
- 2 c chicken broth
- 1 tsp. Waxing Kara Honey
- 8 oz coconut milk
- 1 tsp. cumin
- 1 tsp. salt
- 1 lime juiced and zested
