How to Make Banana Yogurt Muffins

Step one: Get organized

Get started by preheating your oven to 375 F, prepare muffin tins and set aside.

Step two: Mix ingredients

In a large bowl whisk together oatmeal, flour, flaxseed, baking powder, and baking soda. In a separate bowl combine eggs, yogurt, bananas, honey, and oil. Add dry ingredients in with wet ingredients combining well without overmixing. Fold in nuts.

Step three: Bake ingredients

Divide batter into paper-lined muffin cups. Bake for 20 minutes or until tops springs back when lightly touched. Remove from oven, allow to sit for 10-15 minutes and cool on a wire rack.

  • 1/3 c coconut oil gently warmed to liquid state
  • 1/2 c Waxing Kara Wildflower Honey
  • 3 medium ripe bananas mashed
  • 1/4 c greek yogurt
  • 2 eggs beaten
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 c ground flaxseed
  • 1/4 c almond flour
  • 1/4 c tapioca flour
  • 1/4 c walnut pieces
